Belgium is recognised the world over for its quality chocolate makers, but there is none like Laurent Gerbaud. Loving the simple pleasures in life, Laurent is driven by passion and excellence, a philosophy he also channelled into the design of his shop and café. We spent a moment with him, reflecting on the beauty of fine food and the process of creation.

" WE DON'T REALLY FOLLOW
|
We met with Laurent in his café and atelier, located in the heart of Brussels. After offering a cup of coffee, he let us try savoury chocolates. Laurent is not the kind of person to compromise on quality. His raw ingredients are carefully sourced from the best suppliers in the world. Spices, exotic fruits — Laurent’s chocolates are high in flavour, but low in refined sugar.
|
The same expectations go with the design of his café, where he consciously opts for timeless designs, in materials such as solid wood, to curate a warm and authentic atmosphere. Just like his chocolates, the space emanates his unique approach and personality, thus creating a holistic experience.
Behind the counter, artisans can be freely observed crafting chocolates in the open kitchen. Transparency and true partnerships are core values of Laurent’s business. Everything here is made by hand, a slow process in which imperfections make the beauty of the final product. For him, quality lies in all things. Raw materials, local production and a positive work atmosphere are equally important. |
“THE CHOCOLATES WE MAKE HERE ARE HYPER-INTUITIVE, BOTH IN CREATION AND IN TASTE. YOU DON'T NEED MUCH EXPLANATION TO UNDERSTAND WHAT WE DO.” |
In his busy life as a business owner, Laurent’s favourite moment of the day is to walk his dog around the city and parks of Brussels. A moment in the fresh air to unwind and re-energise himself with new ideas. We also heard a whisper that he recently opened a new restaurant in the city.
